From the Autumn 2017 Cultivate – One-Pot Meals
Fall in love with fall’s One-Pot Meals. With cooler weather comes shorter days, evening practices and fall projects—not to mention getting healthful dinners on the table. These one-pot recipes are filled with nourishing fall flavors and require minimal clean up. It’s a win-win for the busy weeknights.
Ingredients
1 small onion, diced
3 Tbsp. unsalted butter
1 lb. ground turkey
1″ ginger, peeled and minced
1 Tbsp. garlic, minced
1 Tbsp. curry powder
1 tsp. garam malsala
1 tsp. ground turmeric
1 tsp. ground cumin
1 tsp. ground coriander
1/4 tsp. crushed red chilies (or more)
>1/2 cup chicken stock
2 large russet potatoes, peeled and cubed
2 large tomatoes, cored and chopped
3/4 tsp. sea salt
1/2 tsp. black pepper, ground
1 cup frozen peas
1/4 bunch cilantro
Preparation
In a 3 quart pot, heat butter over medium heat. Add onion and sauté until translucent.
Add ground turkey and cook until crumbled and no longer pink.
Stir in ginger, garlic and spices and cook until fragrant. Add chicken stock, potatoes, tomatoes, salt and pepper. Cover and simmer until potatoes are tender.
Adjust seasoning to taste and stir in remaining ingredients.
