ASIAN-INSPIRED HEALTH SOUP
Ingredients
8 Cups of chicken stock – home made or store bought (can sub vegetable broth for a vegetarian version)
2 inch piece of ginger (peeled and coarsely chopped)
4 cloves of garlic (peeled and coarsely chopped)
3 scallions (coarsely chopped)
8 ounces quartered mushrooms – Cremini or Shiitake
Small head of Napa cabbage, chopped
Preparation
Simmer broth, garlic, ginger, and scallions low in a medium pot, covered, for 30 minutes . Add mushrooms and cook for 5 minutes. Add cabbage and heat through. Taste for seasoning and add salt and pepper as needed.
Optional ingredients: You can other vegetables including snap peas or baby bok choy. Protein may be added such as chopped cooked chicken, or diced tofu.
