Red Curry Drumsticks
Ingredients
Drumsticks
Serves 5
● 1/2 cup coconut milk
● ¼ cup chicken stock
● 2 tbsp Thai red curry paste
● 1 tbsp coconut aminos or soy sauce
● 1 tbsp maple syrup
● ¼ teaspoon salt
● 2 teaspoons grated fresh ginger
● 1 large garlic clove, grated
● Zest of one lime
● 8-10 Chicken drumsticks
Garnish
● Fresh Thai basil
● Fresh cilantro
● Limes
Preparation
1. Add all ingredients, minus the chicken, into a bowl. Whisk everything together.
2. Pour marinade over the drumsticks and seal in a zip lock bag. Let marinate for at least 2 hours or overnight for best flavor.
3. Preheat grill to medium high heat, around 375 degrees fahrenheit.
4. Place chicken on the grill and cook for about 20 minutes. Flip them over and cook for another 10-15 minutes or until the internal temperature reaches 180-185 degrees fahrenheit.
5. Remove from the grill and let rest for a few minutes.
6. Finish with chopped fresh herbs and freshly squeezed lime juice.
