Fall in love with fall’s One-Pot Meals. With cooler weather comes shorter days, evening practices and fall projects—not to mention getting healthful dinners on the table. These one-pot recipes are filled with nourishing fall flavors and require minimal clean up. It’s a win-win for the busy weeknights.
Creamy Pasta with Sausage
Ingredients
1 lb. orecchiette pasta
3 Tbsp. olive oil
4 sausages, sweet or spicy Italian
1 small onion, diced
3 Tbsp. butter, unsalted
3 Tbsp. all-purpose flour
2 cup whole milk
1/2 tsp. sea salt
1/2 – 3/4 cup grated Parmesan cheese
1/2 cup frozen peas
Preparation
Cook pasta according to package directions. Drain, and set aside.
In the same pot, heat oil over medium heat. Cook sausages until nicely browned and cooked through. Set aside to cool and slice.
Add butter to pot and sauté onion until translucent.
Stir in flour and cook for a minute or so then whisk in milk.
Bring milk to a gentle boil, and cook for a few minutes, stirring frequently.
Once mixture has thickened, lower the heat and stir in salt and Parmesan until smooth.
Fold in cooked pasta, peas and sliced sausage. Adjust seasoning to taste. Serve promptly with extra Parmesan on the side.
