GLUTEN FREE, DAIRY FREE AND VEGAN
Make 14-16 balls

Ingredients
1 cup pitted medjool dates (~10–12 dates)
1 cup raw almonds
1/3 cup cocoa powder
½ cup shredded coconut flakes
1 tsp. vanilla extract
1 Tbsp. water
¼ tsp. salt
1/3 cup finely shredded coconut flakes
Preparation
- Add pitted medjool dates to a food processer and process until they combine into a ball.
- Add remaining ingredients (except for the finely shredded coconut flakes) and process until evenly combined. When ready, the mixture should easily stick together when pressed between two fingers. If it doesn’t, add water 1 teaspoon at a time, until mixture is easy to handle and roll into balls.
- Roll dough into 1 tbsp.-size balls and coat is finely shredded coconut flakes.
