Cantonese Lobster
Ingredients
2 lobster tails, shelled and cut into 1 inch pieces
2 tablespoons corn starch
1 tablespoon sliced fresh ginger
3 scallions, sliced on the diagonal (white and green parts)
3 tablespoons vegetable oil
2 tablespoons rice wine or mirin
1 tablespoon soy sauce
½ teaspoon sesame oil
½ teaspoon sugar
½ teaspoon white pepper
2 teaspoons sesame seeds
Preparation
Heat vegetable oil in wok over medium-high heat
Toss lobster in corn starch
Add lobster to wok and toss for 10 seconds, remove to a plate
Add ginger and white part of scallions to wok, toss for 20 seconds
Add lobster back into the wok, and pour rice wine around the sides of the wok
Add soy sauce, sugar, sesame oil, pepper
Toss for 1-2 minutes, remove from heat and add most of the green scallions
Serve with rice and garnish with remaining scallions and sesame seeds
