VEGAN BLACK-EYED PEA WAFFLES

Ingredients

2 Tbsp flaxseed meal (ground
raw flaxseed)
5 Tbsp water
1 ½ cup black-eyed pea flour*
1 ½ cup all-purpose flour (or
other desired flour)
4 teaspoons baking powder
1 teaspoon salt
4-6 tablespoons brown sugar
(adjust to your sweetness
preference)
3 cup milk (you can use dairy
or plant-based milk)
4 tablespoons coconut oil
melted (or other oil of choice)
2 teaspoons vanilla extract
(optional)
Cooking spray or oil for
greasing the waffle iron
Maple Syrup for serving

*You can purchase Black-Eyed
Pea Flour or create your own by
pulverizing the Black-Eyed Peas
into a fine powder using a
blender, coffee/spice grinder or
other food processor.

Preparation

  1. Add flaxseed meal and water to a medium sized bowl
    and stir. Let rest for 5 minutes to thicken.
    Preheat your waffle iron according to its manufacturer’s
    instructions.
  2. In a mixing bowl, whisk together the black-eyed pea
    flour, all-purpose flour, baking powder, salt, and sugar.
    Add the milk, melted coconut oil (or other oil), and
    vanilla extract (if using) to the bowl with the flaxseed
    mixture, Mix well.
  3. Pour the wet ingredients into the bowl with the dry
    ingredients. Stir until just combined. Don’t overmix; a
    few lumps are okay.
    Lightly grease the waffle iron with cooking spray or a
    small amount of oil.
  4. Pour an appropriate amount of batter onto the
    preheated waffle iron, following the manufacturer’s
    instructions for your specific waffle iron. The amount
    may vary depending on the size of your waffle maker.
  5. Close the waffle iron and cook until the waffles are
    golden brown and crisp. The cooking time can vary, but
    it’s typically around 3-5 minutes.
  6. Carefully remove the waffles from the iron, and keep
    them warm in a low oven while you cook the remaining
    waffles if needed.
  7. Serve your black-eyed pea waffles with your favorite
    toppings such as fresh fruit, maple syrup and whipped
    cream or serve them with our Harissa Maple Caramel
    Sauce and Pan-fried Mushrooms for a savory, sweet and
    spicy vegan twist on the classic Chicken & Waffles.
