• Grass-Fed Beef Chili


Ingredients

1 lb. Thousand Hills Cattle Co. grass-fed ground beef
1 large onion, chopped
1 green bell pepper, chopped
2 Tbsp. chili powder
1 tsp. cocoa powder
14.5 oz. Muir Glen Organic Diced Roasted Tomatoes

28 oz. Muir Glen Organic Diced Tomatoes
25 oz. Westbrae Organic Kidney beans, drained and rinsed

Optional toppings:
Tortilla chips
Sour cream or plain yogurt
Shredded cheddar
Lime wedges
Green onions
Fresh spinach, chopped
Fresh parsley or cilantro, chopped

Preparation

  1. Brown the ground beef, onion and bell pepper over medium heat in a large pot.
  2. Stir in spices and cocoa powder.
  3. Add tomatoes and bring to a boil. Reduce heat to low, cover and simmer for 1 – 1½ hours, stirring occasionally.
  4. Add kidney beans and simmer uncovered for about 10 minutes.
  5. Serve with your favorite toppings and enjoy!
