Dilly Thousand Island Dressing


Ingredients

Makes 4 cups

4 oz. cup Silken tofu 

½ cup vegan yogurt 

2 tsp dijon mustard 

⅛ cup ketchup 

2 tsp Lemon juice or white vinegar 

A dash of Black Pepper 

Hot sauce to taste 

¼ cup Sweet pickle Relish, finely chopped 

⅓ cup White onion finely chopped 

⅓ cup Fresh parsley finely chopped 

1 tsp dried dill  

Salt to taste 

Preparation

Instructions 

  1. With an immersion blender or a stand blender, combine the first seven ingredients and blend on high until smooth. 
  2. Mix in pickles, onions and herbs. Adjust seasoning to taste. 
  3. Blitz in short bursts a few more times for a smoother consistency. 

This sauce gets better with time. Make a day ahead for maximum flavor.
