Apple Cheddar Thyme Muffins
Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
4 oz Widmer’s 4 year cheddar cheese, grated
2/3 cup brown sugar
1 stick butter, melted
2 large eggs
1 cup milk
2 large tart firm apples, peeled and diced (about 1 1/2 cup)
3 teaspoons chopped fresh thyme, or 2 teaspoon dried
Preparation
In a medium bowl, sift flour, baking powder, salt together, gently toss cheese into dry mixture, set aside. In a large bowl, combine brown sugar and melted butter, whisk to combine. Add eggs and milk, whisk again. Stir in dry ingredients, then apples and thyme, mixing gently to incorporate all ingredients but do not over mix.
Put 2/3 cup batter into 10-12 muffin tins lined with paper. Bake at 425 for 20 minutes or until tops are golden. Cool on a wire rack.
