32 Bean and 8 Vegetable Soup Mix
Ingredients
Dried soup mix: Organic barley, 8 air dried vegetables — carrots, onions, celery, whole kernel sweet corn, green and white leeks, green beans, red bell peppers, and green bell peppers, 32 kinds of beans, including appaloosas, calypsos, and cannelinis, as well as the huge Christmas limas.

Preparation
Easy to prepare as soup or chili — vegetarian as is, modify as you wish.

Basic recipe
- Use 1 part soup mix and 8 parts water.
- Bring to a boil for 5 minutes.
- Then simmer 2-3 hours.
- Modify, if you wish, by adding ham (hock or diced), poultry, or beef.
Ideas
- When beans are tender, try adding crushed tomatoes.
- Experiment with seasonings such as chili powders, lemon juice, salt, and pepper.
- To create a thick mixture for tacos, steam off excess water.
Freezes well — Prepared soup may be frozen and reheated.
Yield — One cup of dry soup mix weighs 0.4 lb and makes 8-10 cups of soup when hydrated.
Storage — Best if used within 12 months. Store tightly sealed in a dry location away from sunlight.
