Spring means something different to everyone. Whether it’s the inaugural stroll around Lake Calhoun, the first breezy bike ride to work, the season opener of youth baseball, or a fresh batch of spring’s bounty, gathered in a spring salad. As we uncover our gardens and bask in the longer, warm(ish) days, it’s the season of anticipation and appreciation after our odd, unpredictable winter. Everyone has a little skip in their step to welcome the fresh, new season. And no place welcomes spring as much as the Wedge.
TBSP. WAFFLES POP-UP SHOP AT THE WEDGE TABLE!
Tbsp. waffles makes liège waffles, which are the unknown but tastier sister to the familiar Belgian-style waffle. The waffles are made out of a buttery, brioche-like dough and with the addition of sugar pebbles called “pearl sugar,” they caramelize when they hit the hot iron. Every summer, the Wedge, along with a dozen other Twin Cities area co-ops, put on the Eat Local Farm Tour, and this year we’re introducing a new name, the Co-op Farm Tour! This is a day for you and your friends and family to venture out to see the people and land behind your food. This year we’ll have more than 25 urban and rural farms from which to choose.

Miso Grilled Veggie Bowl filled with roasted portabella, grilled onion, miso zucchini and arugula, over brown rice with carrot ginger vinaigrette.
