Turkey Wild Rice Soup


Ingredients

4-6 cups shredded leftover turkey 

2 cups leftover wild rice 

Any leftover unsauced cooked vegetables – corn, carrots, green beans, peas 

3-4 cups leftover gravy (canned or boxed also works)

4-6 cups turkey broth (can use chicken broth also)

1 cup heavy cream or half-and-half, if desired 

Salt and pepper to taste 

Dry sherry, optional 

Fresh chopped parsley to serve 

Preparation

In the pot over medium heat, combine turkey, rice, vegetables, gravy. Gradually add broth until you get the consistency you desire. Taste for seasoning and adjust if needed. Add a splash (up to ¼ cup) dry sherry, stir to heat. Off heat, add some cream or half-and-half if desired. Ladle into bowls and garnish with parsley. 

Other additions could include: 

Sauteed leeks 

Sauteed mushrooms 

Cooked and crumbled bacon 

Diced ham 

Cubed squash 

More fresh or dried herbs such as sage and/or thyme
