Spicy Peanut Noodles with Garlic Ginger Broccoli
Ingredients
Spicy Peanut Noodles:
8 oz Soba noodles
4 Tablespoons Peanut Butter
4 Tablespoons Tamari
1 Tablespoon Rice Vinegar
2 Tablespoons Toasted Sesame Oil
1-2 Tablespoons Roland Spicy Chili Onion Crisp
4-6 Tablespoons Reserved Noodle Water
Garlic Ginger Broccoli:
1 Tablespoon extra virgin olive oil
8-10 oz Broccoli florets
3 cloves garlic, sliced
1 Tablespoon ginger, minced
1/8 cup water
3 green onions, sliced (for garnish)
Peanuts (for garnish)
Preparation
- Combine sauce ingredients: peanut butter, tamari, rice vinegar, sesame oil, chili onion crisp in large mixing bowl. Set aside.
- Cook noodles according to package directions, 6-7 minutes.
- While noodles are cooking prepare broccoli. In large skillet, heat olive oil medium heat for 1 minute. Add broccoli florets, tossing occasionally until bright green, 5 minutes. Add small amount of water if needed to prevent sticking. Add garlic and ginger, cook for 1 minute. Take off heat.
- Drain noodles, reserving up to 6 Tablespoons of cooking water.
- Add noodles to sauce bowl. Use tongs to incorporate well. Add reserved cooking water as needed to have the consistency you would like.
- Mix in broccoli.
- Serve. Top with fresh green onions and peanuts.
