Spicy Peanut Noodles with Garlic Ginger Broccoli


Ingredients

Spicy Peanut Noodles:

8 oz Soba noodles

4 Tablespoons Peanut Butter

4 Tablespoons Tamari

1 Tablespoon Rice Vinegar

2 Tablespoons Toasted Sesame Oil

1-2 Tablespoons Roland Spicy Chili Onion Crisp

4-6 Tablespoons Reserved Noodle Water

Garlic Ginger Broccoli:

1 Tablespoon extra virgin olive oil

8-10 oz Broccoli florets

3 cloves garlic, sliced

1 Tablespoon ginger, minced

1/8 cup water 

3 green onions, sliced (for garnish)

Peanuts (for garnish)

Preparation

  1. Combine sauce ingredients:  peanut butter, tamari, rice vinegar, sesame oil, chili onion crisp in large mixing bowl.  Set aside.
  2. Cook noodles according to package directions, 6-7 minutes.
  3. While noodles are cooking prepare broccoli.  In large skillet, heat olive oil medium heat for 1 minute.  Add broccoli florets, tossing occasionally until bright green, 5 minutes.  Add small amount of water if needed to prevent sticking.  Add garlic and ginger, cook for 1 minute.  Take off heat.
  4. Drain noodles, reserving up to 6 Tablespoons of cooking water.
  5. Add noodles to sauce bowl.  Use tongs to incorporate well.  Add reserved cooking water as needed to have the consistency you would like.
  6. Mix in broccoli.
  7. Serve.  Top with fresh green onions and peanuts.
