Miso Salmon
Ingredients
1 pound salmon, cut into 3-4 filets
2 tablespoons white miso
1 tablespoon soy sauce
2 teaspoons brown sugar
2 teaspoons rice vinegar
Thinly sliced scallions
Rice for serving
Preparation
In a small bowl, mix miso, soy sauce, brown sugar, and rice vinegar. Reserve 1 tablespoon of the sauce.
Brush remaining sauce on salmon filets and marinate in refrigerator 1 hour
Heat oven to 375. Place salmon on a rimmed baking sheet and roast in oven 12-15 minutes.
Brush with remaining sauce, switch oven to broil and broil 2-3 minutes until sauce starts to caramelize
Serve with rice, garnish with scallions
