Kofta Lamb Burgers


Ingredients

Makes 4

For the burgers:

1 ½ pounds ground lamb (From the Lamb Shoppe)

1 tablespoon garam masala 

1 teaspoon smoked paprika 

¼ cup finely minced onion 

4 garlic cloves, finely minced 

½ cup flat leaf parsley, finely chopped 

Pinch of chili flakes 

2 teaspoons salt 

For the fixings:

1 cucumber, thinly sliced 

1 red onion, thinly sliced into rings 

2 cups fresh arugula 

Sumac yogurt sauce: 1 cup plain yogurt, 2 teaspoons ground sumac, 3 tablespoons minced parsley, ½ teaspoon salt 

Buns or pitas for serving 

Preparation

Mix lamb with all seasonings. Form into 4 large burger patties, or several smaller patties. Grill over medium flame, 5-6 minutes per side until medium.  

Serve on buns or in pitas, with cucumber, onion, arugula and sumac yogurt sauce.
