BEETROOT LATTE
Ingredients
2 Tablespoons beet powder
1 Tablespoon warm water
3 teaspoons maple syrup
1 teaspoon vanilla
½ cup canned coconut milk
¾ cup oat milk
Preparation
In a small saucepan, add beet powder along with water, maple syrup, and vanilla. Whisk to combine until smooth. Add coconut milk and ¼ cup of the oat milk. Bring the mixture to a simmer over medium heat, stirring often for 2-3 minutes. Poor hot beetroot mixture into a mug and set aside. Using a frother, whip the remaining ½ cup oat milk until thick. Top the mug with the frothed milk, and serve hot.
